Among The Pearl’s standout dining destinations is Southerleigh Fine Food & Brewery, housed in the former brewhouse. Recognized by the Michelin Guide, this restaurant celebrates Southern flavours with a Texas twist, offering everything from freshly shucked oysters to signature Gulf seafood dishes. The restaurant’s commitment to sustainability and quality is reflected in its menu, with nearly everything made in-house.
Oyster Ambassador

Southerleigh’s Chef de Cuisine is Aaron Juvera, an acclaimed chef with deep expertise in seafood. As an Oyster Ambassador and the first San Antonio-based chef certified by the Oyster Master Guild, Chef Juvera is passionate about the delicate balance of flavours that oysters offer. “I’m fascinated by oysters and how the flavours reflect the environment they’re grown in. We call it merroir, similar to terroir in wine,” he explains. His dedication to sustainable oyster cultivation and innovative seafood dishes ensures that every plate at Southerleigh is both flavourful and ethically sourced. Chef Juvera also emphasizes minimizing waste through responsible sourcing, noting that by-catch—seafood unintentionally caught alongside target species—is repurposed creatively to ensure nothing goes to waste.

There are many highlights along the River Walk, including San Fernando Cathedral, one of the oldest cathedrals in the United States. In the evenings, it becomes the backdrop for The Saga, a 24-minute light and sound show that narrates the history of San Antonio through stunning visuals projected onto its historic facade. A standout meal includes pork souvlaki, grilled to perfection with a delicate balance of herbs, citrus, and smoke. Chef Mike Giaffeo spent weeks traveling through Greece to master this dish, and the result is nothing short of authentic and delicious.
